This Year’s Chef – Mitsui

He has over 20 years of experience as a sushi chef, mastering traditional Edomae techniques while sourcing the freshest seafood directly from local fishing ports. In 2025, he brings his craft to our restaurant in Myoko, showcasing an authentic yet creative approach that highlights Japan’s local flavors and the true spirit of seasonal sushi.

Last Year’s Chef – Chuei Tomita

He served as Head Chef at Tokyu Hotels and a luxury resort in Hakuba, and was even selected as a candidate for Presidential Chef in Uzbekistan. In 2024, he led our restaurant in Myoko, where he captivated guests with his unique dishes that fused Japanese Wagyu with his international experience.
